Day 12: January 22nd, 2016

Day 12 Agenda
  1. Intermittent fast. Please don't forget to eat a nice dinner tonight {as in Day 11 night;)} in preparation for tomorrow's fast {remember, do not carb overload}. So, tonight will be your last meal and then tomorrow go as long as possible without food until you get very hungry and then eat a very primal-icious meal:) 

Meal/Snack Ideas:


Breakfast- scrambled eggs with spinach and aged cheese


Lunch- mustard roasted fish by our guest, Ina Garten!

Just kidding...but I did try this recipe after stumbling upon it on Pinterest a while back which IS primal and IS delicious! Click HERE for this recipe. 

Dinner- curry and meatballs 
{from the 1/16 bon appetite magazine}

Meatball Ingredients:

  • 6 scallions, 1" pieces 
  • 2 jalapeños, seeds removed
  • 6 garlic cloves
  • 1 1" piece of ginger, peeled and chopped
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp garam masala
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 2 lbs ground beef {look for grass-fed}
  • 1 large egg
  • 2 Tbsp full fat plain yogurt 
  • 2 tsp sea salt
Curry Sauce:
  • 1/4 cup olive oil
  • 4 medium onions, chopped
  • 10 garlic cloves, crushed
  • 1 1/2" piece ginger, peeled and chopped
  • 3 dried chiles de árbol
  • 4 tsp curry powder
  • 4 tsp ground cumin
  • 4 tsp ground turmeric
  • 3 Tbsp ground coriander
  • 1 tsp black peppercorns
  • 1 14.5oz can crushed tomatoes
  • 1 bay leaf
  • 1 Tbsp sea salt
  • 1 Tbsp fresh lemon juice
  • 1/2 tsp cayenne pepper
  • cilantro leaves for serving
Meatballs - Preheat oven to 400 degrees and on a baking sheet lightly coat with olive oil. Puree all meatball ingredients except for ground beef in a blender until smooth. Transfer to a bowl and add ground beef. Mix with your hands until mixture is homogenous and sticky. Roll beef mixture into golf-sized portions and place on baking sheet. Drizzle meatballs with more olive oil and bake for 20-25min until browned and cooked through.

Sauce - while meatballs are in the oven, heat olive oil in large dutch oven pot over medium. Add onions, garlic, and ginger stirring often until onions are translucent and start to brown, 8-10min. Store in chiles, curry powder, cumin, turmeric, coriander, and peppercorns. Stir often and cook until mixture is fragrant and spices start to stick to pot, about 2min. Add tomatoes, stirring and scraping bottom of pot, and bring to boil. Add bay leaf, 1 Tbsp salt and 2 cups of water and return to boil. Reduce heat and simmer until flavors have melded, 25-30min. Transfer to blender and blend until smooth. Transfer back to pot, stir in lemon juice, cayenne, and season with more salt if needed. Place meatballs in curry mixture and bring to a simmer until meatballs are heated through, 10-15min. 
Serve topped with cilantro.
